“ricotta”

I ran across this Bon Appetit recipe for ricotta when I made my gnudi. As they correctly note, this isn’t a true ricotta; however, it is quite easy. The Serious Eats quick ricotta is very similar, and true to Serious Eats style they took it upon themselves to compare acids. I did my own comparison, and found that white vinegar was suitable for my purposes (just plain ricotta on a cracker).
